Organic Vegan Jambalaya
Ingredients
- 1.5 cup of basmati rice
- 1 red onion chopped
- 3 cloves of garlic, minced
- 2 red peppers, sliced in to bite size chunks
- 2 stalks of celery, chopped
- 1 tin of Chopped Tomatoes
- 1 tin of Kidney Beans
- 1 Tsp dried oregano,
- 1 Tsp dried basil
- 1 Tsp turmeric
- 1 Tsp smoked paprika
- 3 Tbsp soy sauce or Teriyaki
- 1 Tsp tabasco
- Cayanne pepper o
- 1 spring onion, cut to rings
- (Optional) parsley, chopped
Method
- Cook the rice according the packaging. Set aside.
- In a large pan heat some oil and saute the red onion for about 2-3 minutes. Add the garlic and cook for another minute.
- Add the bell peppers and the celery. Cook for another 3 minutes.
- Stir in the cooked rice, the kidney beans, the chopped tomatoes, the spices, the soy sauce, and the Tabasco. Cook for about 5 minutes.
- Season with salt and cayenne pepper and stir in the green onions & parsley
